INGREDIENTS
ICE CREAM
Whole Milk 680g
Corn Starch 15g
Cream Cheese 55g, room temp
Diamond Crystal Kosher Salt .35g
Heavy Cream 365g
Sugar 160g
Light Corn Syrup 70g
Coarsely Ground Coffee 15g
Bourbon County Stout Reduction 150g
BOURBON COUNTY STOUT REDUCTION
Goose Island Bourbon County Stout 307g
Vanilla Pods 2g, cut in half and seeds scraped off
Sugar 25g

Coconut Oil 65g
Instructions
ICE CREAM
Step 1
Combine the corn starch and a few tablespoons of milk in a small bowl and whisk into a slurry. Reserve.
Step 2
Combine the cream cheese and salt in a medium bowl and mix well. Reserve.
Step 3
Combine the milk, cream, sugar, corn syrup, and bring to a boil while stirring. Cook at a simmer for 5 minutes. Remove from heat and add the coffee to the mixture, allow to steep for 5 minutes.
Step 4
Strain the mixture through a fine mesh strainer lined with cheese cloth. Discard the solids.
Step 5
Return the cream mixture to a clean pot and whisk the slurry in. Turn on heat, bring to a simmer and cook for about a minute. Remove from heat and immediately whisk it into the cream cheese mixture. Make sure it's smooth! Add Bourbon County Stout reduction to mixture.
Step 6
Place in an ice bath and cool down to 45F. Transfer into your ice cream maker and allow to churn for about an hour. Transfer into air tight containers and top with a piece of parchment paper to prevent freezer burn. Freeze for 4 hours.
BOURBON COUNTY STOUT REDUCTION
Step 1
Combine the stout and the vanilla in an appropriately sized pot and bring to a boil while stirring to prevent scorching.
Step 2
Reduce by half.
Step 3
Add the sugar and reduce into a syrup texture (should coat the back of a spoon). Strain and allow it to cool. Reserve.

Combine chocolate and coconut oil in a bowl and place on a double boiler.
Step 2
Whisk when the chocolate starts to melt and continue until smooth.
Step 3
Pour magic shell over scoop of ice cream and allow it to harden.
