Herb and Spice Fruit Cocktail Syrups

Serves 1

INGREDIENTS

Spiced Beer Cocktail

For the spice simple syrup:

  • 1 cup water
  • 1 cup sugar
  • One bunch of spices, like a cinnamon stick, cardamom pods, star anise, and cloves
  • 2 dashes bitters (optional)

In a small saucepan over medium heat, combine the water and sugar and mix until sugar has dissolved. Add the spices and cook for 2 minutes. Remove the pan from the heat, and steep the spices in the syrup until fully cooled. Remove the spices. Add a few dashes of bitters for color if you’d like. Store in the refrigerator.

For the cocktail:

  • 2 teaspoons spice simple syrup
  • 1/3 cup tonic water
  • 1/3 cup Goose Island Oktoberfest

Pour the chilled spice syrup in the bottom of a glass. Add the tonic water and top with Oktoberfest. Serve immediately.

 

Coffee Beer Cocktail

For the coffee simple syrup:

  • 1 cup strong, brewed hot coffee
  • 1 cup sugar

In a small saucepan over medium heat, combine the coffee and sugar and mix until sugar has dissolved. Let the syrup rest until fully cooled. Store in the refrigerator.

For the cocktail:

  • 2 teaspoons coffee simple syrup
  • 1/3 cup tonic water
  • 1/3 cup Goose Island Honkers Ale

Pour the chilled coffee syrup in the bottom of a glass. Add the tonic water and top with Honker’s Ale. Serve immediately.

DIRECTIONS

Grapefruit Beer Cocktail

For the grapefruit simple syrup:

  • 1 cup water
  • 2 cups sugar
  • 2 tablespoons grapefruit juice
  • 1 grapefruit peel

In a small saucepan over medium heat, combine the water and sugar and mix until sugar has dissolved. Remove the syrup from the heat. Add the grapefruit juice and peel to the syrup. Let the syrup rest until fully cooled. Store in the refrigerator.

For the cocktail:

  • 2 teaspoons grapefruit simple syrup
  • 1/3 cup tonic water
  • 1/3 cup Goose Island 312 Urban Wheat Ale

Pour the chilled grapefruit syrup in the bottom of a glass. Add the tonic water and top with 312 Urban Wheat Ale. Serve immediately.

 

Herby Beer Cocktail

For the herb simple syrup:

  • 1 cup water
  • 1 cup sugar
  • 1 sachet of fresh herbs, like rosemary, lavender, and thyme

In a small saucepan over medium heat, combine the water and sugar and mix until sugar has dissolved. Remove the syrup from the heat. Let the syrup rest until fully cooled. Add the herbs and let them steep for 2 hours. After 2 hours, strain the herbs out of the simple syrup and store in the refrigerator.

For the cocktail:

  • 2 teaspoons herb simple syrup
  • 1/3 cup tonic water
  • 1/3 cup Goose Island 312 Urban Wheat Ale

Pour the chilled herb syrup in the bottom of a glass. Add the tonic water and top with 312 Urban Wheat Ale. Serve immediately.

 

Plum Beer Cocktail

For the plum simple syrup:

  • 1 cup water
  • 1 cup sugar
  • 1 medium plum or other stonefruit

In a small saucepan over medium heat, combine the water and sugar and mix until sugar has dissolved. Remove the syrup from the heat. Cut up a plum and add it to a small, glass container (or muddle it at the bottom) and pour the hot simple syrup over it. Let the syrup rest until fully cooled. Store in the refrigerator.

For the cocktail:

  • 2 teaspoons plum simple syrup
  • 1/3 cup tonic water
  • 1/3 cup Goose Island 312 Urban Wheat Ale

Pour the chilled plum syrup in the bottom of a glass. Add the tonic water and top with 312 Urban Wheat Ale. Serve immediately.
