1516 Fulton And Wood Story

At the corner of Fulton & Wood streets in Chicago, Goose Island’s original brewery has been a hub of innovation since its doors opened.  To this day, the spirit of experimentation remains strong with the Fulton & Wood series.  Each release gives Goose Island employees from throughout the company the chance to work with our brewers to concept new, exciting beers from scratch.

1516 Is brewed to honor the traditional German brewing practices and processes as a gently smoked Bavarian Kellerbier, slightly hazy with bready malt and a clean finish. Well balanced and complex, the beer drinks well alone or with food.

The name 1516 is an homage to the 500th anniversary of the Reinheitsgebot or German Beer Purity Law.  This law stated that the only ingredients that could be used in production of beer were water, barley and hops. This law was adopted by all of Bavaria on April 23, 1516 making this year the 500th anniversary.

Each release gives Goose Island employees from throughout the company the chance to work with our brewers to concept new, exciting beers from scratch.

Bee Squad is a Biere de Miele traditionally brewed with honey. Bee Squad has a saison-like base combined with honey and apricot essences. In the end, the beer is easy drinking and has a nice complexity for an 8% ABV beer. It has low hopping, but is refreshing and light for the ABV.

The name Bee Squad name was inspired both by the ingredients in the beer as well as the brewers on the team. Goose Island's Brewery on Fulton & Wood runs around the clock with teams of brewers splitting shifts in order to brew the beer you love. Every brewer on Bee Squad's team happens to be on the "B" brewing shift and call themselves the B Squad.

Fassinator

THE FASSINATOR STORY

Each release gives Goose Island employees from throughout the company the chance to work with our brewers to concept new, exciting beers from scratch.

Fassinator, pronounced "Fahss-in-ator" like Arnold Schwarzenegger would say, is Goose Island's take on a Blonde Doppelbock. The name is derived from the combination of the German word for on draught, "Vom Faß", and the traditional ending of most doppelbocks,"–ator". Fassinator has a subtle hop aroma with a moderate body, smooth biscuit malt flavor and moderate bitterness creating a unique balance to this classic style. Don't underestimate this beer however, Fassinator clocks in at 8.0% ABV.

A Real Nice Surprise draws inspiration from two holiday classics – eggnog and National Lampoon's Christmas Vacation. When our brewers sat under the train tracks sipping on the infamous, and high-octane, Tom & Jerry the team knew the flavors of eggnog, rum and bourbon needed to find a home in a holiday beer. A Real Nice Surprise starts life as a rich porter brewed with chocolate malts, cinnamon, and nutmeg that is then aged in a combination of rum, bourbon, and brandy barrels for two months resulting in a smooth, creamy beer that you will love. So curl up next to a fire, have a sip, and enjoy the holiday spirit because this beer is a surprise...A Real Nice Surprise.

St. Genevieve

St. Genevieve Story

Brewed in collaboration with Crown Valley Winery, this homage to the flavors found in sangria is perfect for sipping on summer patios. Over 50 pounds of fruit, including pears, oranges, limes, blueberries, pineapple, and mangoes, were added to both wine and brandy barrels from Crown Valley and aged with our Belgian-style wit over 6 weeks. The result is a juicy, full-bodied crimson ale with a bouquet of citrus and fruit, subtle peppery spice, and a crisp, slightly tannic finish.

My Shout

My Shout Story

Winters are a time when we turn to warmer climates and places we don’t have to worry if seven layers of clothing will be enough. Our brewers wanted to bring you there without leaving your bar stool with their latest F&W release, My Shout. Named for an Australian way of calling the next round of beers, My Shout brings a style to Chicago that has rarely been seen in the US. Brewed specially with an Australian sparkling ale yeast, hints of apricot and stone fruit combined with mild but spicy and citrusy hops make My Shout a refreshing way to forget about the subzero temperatures here and take a 16-ounce trip to summer down under.

Shred the Gnar

Shred the Gnar Story

Shred the Gnar is brewed to celebrate those passionate few who brave the waves of Lake Michigan in the dead of winter. While our passion lies in brewing, we know what it means to do what you love to the extreme. We brewed this beer to be big and hoppy with the West Coast surf culture in mind while adding a Midwest twist with tart Cherry juice from Michigan. To make this beer just a bit more gnarly we threw in some fresh lemongrass to create a bright aroma that keeps you coming back for more. We hope this beer will help warm up all those who get out and Shred the Gnar in whatever ways they love this winter.

Lilith

Lilith Story

Lilith is a Berlinerweiss with some pretty evil intentions. Our brewers wanted to create a beer that blends the succulent sweetness of pomegranate, also known as “the fruit of the dead”, with the bold tartness of a traditional Berlinerweiss. The result is an irresistibly drinkable beer with a nice bite. It is for this reason that Lilith is named for the seductress and mythical night creature some consider to be the first vampire. Wickedly attractive and dangerously alluring, she is hard to refuse once she sinks her teeth in. Don’t say we didn’t warn you.

Devon Ave.

Devon Ave. Story

Devon Ave. is a pale ale that recalls an age of daring exploration and trade across uncharted waters. This team set out on the brackish sea of brewing innovation in search of a recipe that would honor age-old tradition and modern technique. The tradition of English brewing, the cuisine of India, and the knowledge of our brewers in Chicago converged at the Patel Brothers Spice House on Devon Ave. Here they found the spices they would use in the finished beer - amchoor spice, cardamom, ajowan, along with chai tea from David’s Tea in Canada.

Nice clarity with a golden maple hue and a lasting cream-colored head; Harmonious balance of Chai blend, cinnamon, tropical green mango and a spicy earthiness; Complex blend of tart mango, thyme, mint, slightly smokey with a pleasant creamy mouthfeel; Dry with a mild astringency from the tea.

Hunting Down the Rasselbock

Rasselbock Story

Dunkelroggenweizenbock - A German style, dark wheat, rye beer.

A mythical blend of German brewing traditions and a bit of Chicago alchemy, the Rasselbock is a rare creation that blends delicious malts, cascading texture, and a mild roast flavor perfect for winter's surrender to the spring.

More than just a frankenstein of beer styles, the team worked to find the perfect balance of grains, evoking a German style wheat, and rye beer all in one. The creamy body and frothy head is as thick as the fever dream most likely responsible for its invention, and the subtle spice note quality comes from the Weihenstephan yeast — a familiar strain from brewer Patrick Reisch's internship experience at Spaten in Germany.

With the team’s inspiration behind him, lead brewer Patrick Reisch worked to combine the elements of a Dopplebock, Rogenbier, and a Bavarian Weiss, creating a beer with clove aromatics, a hint of banana, and a dry rye finish.
